Since I was a little girl I loved being in the kitchen with my mother and grandmother. I was always curious how simple ingredients could be transformed into so many delicious meals. The kitchen was my lab and it was exciting to learn about and try different foods and cuisines from around the world.
When I was diagnosed with Hashimoto’s thyroiditis, and then with Celiac disease over a decade later, I took an in-depth look at my health and what I found was remarkable. I learned that FOOD IS MEDICINE. Through diet and lifestyle changes I went from chronically fatigued, depressed, and in pain to having energy, happiness, and appreciation for life. A vigor that I had once lost was now found!
